El Huarache Loco offers Mexico City–style street food within the Marin Country Mart and was launched in 2005 by chef Veronica Salazar who was the first graduate of San Francisco’s La Cocina incubator. The menu centers on huaraches, griddled corn masa bases topped with ingredients like cactus salad, braised meats and fresh cheeses, and dishes such as mole, tinga and gorditas. Recipes are inspired by Salazar’s upbringing in Mexico City and her family’s long history in the restaurant business, with an emphasis on traditional techniques and house-made masa.
