Tomato and Chicken Galettes with Greens

10 Sep

Achieving success with combining the buttery, flaky delight of puff pastry with the juicy, flavorful tomato has eluded me for some time. Puff pastry doesn’t handle liquid too well and tomatoes in the summer are all about juice. Maybe the sun drieds would work, but I make an effort to avoid those jarred chewy bits as best I can. Also, this somewhat impressive effort seems to be a good one for entertaining but it doesn’t (*at least I thought) handle being made ahead too well and therefore necessitates some focus and fussing when socializing poses distraction. Fluffy Homemade Pancakes

7 Aug

By no means are all pancake recipes created equal. Results can be more disappointing than not. Too rubbery or flat. Not fluffy or flavorful. It’s a challenge. But some recent attempts have hit the mark, so much so that I wasn’t sure which recipe to post. (UPDATE:  click here for the new contender.) Continue reading

Sausage and Veggie Strata

1 Jul

This strata, along with the Tomato and Basil version I posted yesterday, is a great option for breakfast or brunch for a crowd. I made them for a number of years for the Fourth of July Parade which passes by the front of our house on its route. Continue reading

Tomato Basil Strata: A Make-Ahead Egg Casserole

29 Jun

If you’re looking for a crowd pleasing, make-ahead breakfast recipe for your 4th of July festivities, this strata is it. (I’ll  post the Sausage Veggie version this weekend.) Egg casseroles can be overly dry or ultra eggy, but these are more like a frittata and are full of flavor.

In my first post, I share my make-it-simple cooking philosophy and emphasize that enjoying great food doesn’t have to be a laborious process.

So here I am, pondering that thought again as I face the summertime desire to fully enjoy bountiful produce and outdoor cooking. But the loss of daily structure seems to hasten the arrival of dinner and the realization that it hasn’t yet crossed my mind. Continue reading

Summer Strawberry Muffins

29 May

This is a “compilation recipe” that combines the elements I like in a muffin – no long wait between steps, an ingredient or two that provides a healthy balance (in this case, wheat pastry flour and Greek yogurt) and something to sprinkle on the top that provides some crunch.  It comes together really quickly and is doable on a weekend morning.  Just start right away with preheating the oven and letting the strawberries macerate.

Strawberry Vanilla Cake

22 May

Strawberry season has arrived and a great way to jump right in and enjoy them after a long winter hiatus is by buying them in bulk at the farmers market. A half a flat (6 baskets) can be found for $12 which is far below grocery store prices.
